An over ripened banana makes a perfect natural sweetener. As bananas ripen the starch in the fruit breaks down increasing it's sugar content. So while it may be tempting to throw out those black bananas, please don't. In this case I've used an over ripe banana in my oatmeal in place of any sugar or artificial sweeteners. You could also use ripe bananas in smoothies, baked bread, and homemade baby food.

  • 1/2 cup of oatmeal
  • 1 ripe banana
  • 1/2 cup strawberries
  • 1/4 cup of walnuts

Just mash the banana into your dry oatmeal. Add water then cook it in the microwave for 2 minutes. Take it out, top it with some walnuts and a few fresh strawberries and you have a great breakfast.

Makes 1 Serving: 480 Calories
